This Christmas red cabbage recipe is braised in a single saucepan on the hob, which keeps it out of a crowded oven. Grated apple, cider vinegar, brown sugar and a cinnamon stick make a sweet-sharp glaze, and the vinegar keeps the cabbage a deep purple. It is alcohol-free and can be made ahead and reheated.
Grate the apple, add to a large saucepan with the vinegar, sugar, cinnamon stick and a little salt.
Place that pan onto a medium heat and stir in the sugar to dissolve. Once you see steam coming off the pan, turn the heat down as low as possible, place a lid on and leave to cook for 10 minutes.
Slice the cabbage.
Add the cabbage to the saucepan, with the water and some more salt.
Cook on a medium-high heat with the lid on for 5 minutes until the cabbage has visibly wilted and softened.
Stir to get everything mixed together well, lid back on and lower the heat.
Cook for a further 20 to 40 minutes, depending on how soft you want the cabbage to be.
