This is a family recipe, its something my Mum makes every year for Christmas, and its always the first dish on the table to get finished.
What I love about this recipe is, it can be made ahead of time, it comes together quickly and easily, and its a crowd pleaser.

My Mums Leek Gratin | A Family Tradition
This Leek Gratin is a family recipe, its something my Mum cooks every year on Christmas Day. Its creamy, with a crisp cheese top and silky on the inside.
The recipe comes together quick, isn't hard, and you can make it a day of two before to get ahead of the game for you Christmas meal.
Ingredients
- 2 large leeks
- 100g flour
- 100g butter
- 1 litre milk
- 300g cheddar cheese (preferably mature / sharp)
- A spoonful of whole grain mustard
- Salt and pepper
Instructions
- Prepare the leeks, and clean them throughly (see video)
- Cook the leeks in boiling salted water, then place into cold water to cool.
- Make the bechamel sauce, using butter, flour and milk.
- Once the flour is cooked out, take the sauce off the heat and mix in the mustard, cheese, salt and pepper.
- Combine the leeks with the sauce.
- Place everything into an oven safe dish.
- Either bake straight away until the top is golden brown, or place into you fridge. for upto 2 days.
- Bake when you want to serve at 180c / 355f, for around an hour (from fridge cold)
