Mastering the Garlic Puree
To kick off this exquisite chimichurri sauce, we’ll start with the base – the garlic puree. Take three large garlic cloves and expertly peel them using a simple and foolproof technique. Slice the garlic cloves in half from top to tail, ensuring to remove the root end. Next, dice the garlic by making fine cuts and then smear it with salt, using your knife as an abrasive. Alternatively, you can achieve a quick and consistent puree using a microplane, saving you time and effort. Transfer the garlic puree into a bowl and add the delightful combination of red wine vinegar and lime juice to mellow the flavours.
Embracing the Freshness of Parsley and Oregano
For the soul of our chimichurri sauce, we turn to the vibrancy of parsley and the delicacy of oregano. Chop two handfuls of flat-leaf parsley into a fine texture, ensuring to retain some of the top younger stalks for added freshness. Embrace the gentle aroma of fresh oregano as you pick the leaves off the stalk and chop them finely. Remember, a sharp knife is essential for achieving the perfect consistency.
Unleashing the Flavor of Green Onions and Chilli
Enhance the complexity of the sauce with the addition of green onions and chilli. Carefully chop the green parts of the green onions into a fine dice, using the same technique as with the parsley. For the white parts, slice them in half to ensure easy chopping and then create a fine dice, adding depth to the overall texture. As for the chilli, opt for either red chilli or the bold green serrano chilli. Remove the ribs and seeds, and finely slice it before making matchsticks with a meticulous cross-cutting technique. Achieve a brunoise texture by dicing the chilli, ensuring it blends harmoniously with the other ingredients.
Finding the Perfect Balance with Seasoning and Oils
To achieve the perfect harmony of flavours, season the mixture with a teaspoon each of salt and pepper, adjusting to your taste preference. Now, it’s time to add the oils that will bring everything together. Start with half a cup (125 ml) of extra virgin olive oil, chosen for its health benefits and delightful flavour. For a well-balanced taste, incorporate half of a neutral-tasting oil, such as vegetable oil. Mix it all together until the desired consistency is achieved, ensuring the sauce flows smoothly, without being too thick or gloopy.
Revel in the Chimichurri Sensation
Your homemade chimichurri sauce is now ready to dazzle your palate! Drizzle this mouthwatering concoction over grilled meats, vegetables, or any dish of your choice, and savour the explosion of flavours it brings. The freshness of the herbs, the zing of garlic and lime, and the subtle heat of the chilli create a symphony of taste that is sure to elevate your culinary creations to a whole new level. Don’t hesitate to adjust the seasoning and oil proportions according to your preferences, as chimichurri sauce is all about personal taste.
