  • Fry the potato until it’s super crunchy so that they do not become soggy when you add them to the sauce.
  • You can make this dish as spicy as you want, change the amount of chilli.
  • Be careful when you add salt. A lot of bags of frozen fries come already are salted.
  • It is best to eat masala chips as soon as you prepare them for the best texture and crunch.

Masala Chips

If you're looking for a tasty and unique snack to add to your snack rotation, look no further than Kenyan Masala Chips! These spicy and flavourful chips are a staple in Kenya and are gaining popularity around the world. Made with a blend of aromatic spices. In this recipe, we'll show you how to make this traditional snack in the comfort of your own kitchen.

Ingredients

  • 300g / 10.6oz potatoes (i used russets)
  • 1/2 white onion diced
  • 2 x garlic cloves
  • 1 thumb-sized piece of ginger
  • 2 green chillis fine diced
  • 1 tbsp oil
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 175g / 6.2oz / ½ cup fresh tomato puree thick
  • 1 tbsp chilli sauce (i used sriracha)
  • 1 tsp salt
  • Some fresh coriander leaves for garnish

Instructions

  1. Peel and cut the potatoes to your desired size and soak in water for at. least 30 minutes.
  2. Dice the onion and chilli, and finely grate the garlic and ginger.
  3. Heat oil in a wide pan over medium heat.
  4. Add diced onion and fry until it becomes soft.
  5. Add grated garlic and continue to fry for another minute or 2.
  6. Add ginger and chilli and fry for another minute.
  7. Add turmeric, chilli, coriander, and a dash of water, fry until fragrant.
  8. Add tomato puree and cook out for 5 minutes.
  9. Taste for seasoning and add the chilli sauce and salt to taste.
  10. Cook the sauce until its very thick.
  11. Heat your cooking oil until its at 120c / 248f
  12. Drain and dry the potatoes well
  13. Fry in the oil until soft (3-5 minutes)
  14. Drain the fries, turn the heat up on the oil until its at 180c / 355f.
  15. Then fry the fries for 2-3 minutes or until golden brown and crispy.
  16. Drain again, sprinkle with salt and add the fries to the thick masala sauce.
  17. Garnish with coriander, and serve immediately.
